Recipes with Black Pepper  

Garam Masala

1 tbsp coriander seeds

1 tsp cumin seeds

1 tbsp black pepper

2 dried bay leaves

2 red chilies

1 tsp methi or fenugreek seeds

4 cloves

4 cardamom pods

1-inch stick of cinnamon

 

Preparation

1. Roast all the ingredients lightly in a dry skillet, about 4-5 minutes. The spices will be very aromatic and a couple of shades darker when they're ready.

2. Grind together in a coffee grinder and use immediately or store in an airtight container.
